The oven chamber is a generous 64.7’ wide by 38.1, 190.5’ long x 22.86’ high with two thick 1,57’’ ceramic stones(40 x 65 x 4 cm). Lavoie will dramatically change the way you cook, providing endless hours of cooking, conversation and alfresco dining enjoyment! How It Works: Lavoie features heavy double wall oven construction. The outer wall is 0.125" steel and the inside chamber wall is 0.125" 304 stainless steel. The walls are separated by an air space to provide superb high temperature properties, fuel efficiency and all around heat. The heat travels up from the fire box to warm the thick stones on the oven chamber floor, then moves through the air space on the sides providing a 360 degree cooking environment of both radiant and direct heat. With 95% of the flames and smoke diverted from the oven chamber and up the walls, Lavoie provides healthier, more fuel efficient cooking. Food is lightly flavored but not overpowered by smoke. Lavoie is capable of reaching cooking temperatures of 500 to 600° F (260 to 315° C) within an hour of firing with hardwood or lump charcoal. It’s also capable of cooking up to 2 hours after the fire goes out.
